Navajo Grill is one of the finest restaurants in
Fredericksburg, Texas has created its distinct and unique personality thanks, in part, to
a collaborative effort from a legion of local purveyors, producers, vintners, artisans,
& more. We call them our 'Grill Amigos'.
When working with our amigos we use a number of ways to spur commerce, money being the
least preferred. Our favorite method includes trading and bartering in the most creative
ways. "My kitchen guys will come help you move those granite tabletops if you'll give
us one." "This beef is worth at least two cases of that '97 shiraz you've been
sitting on." A paint job for a birthday party. Some rock work for a catered
anniversary. The list goes on!
Produce, produce everywhere!
We use homegrown produce from my Dad's small but prolific vegetable garden
— jalapenos, serranos, poblanos, big jims, bells - green - red - purple,
rosemary, mint, lemongrass, tomatoes—from cherry's to heirlooms, garlic chives,
thyme, sage, cilantro, basil, onions, japanese cucumbers, mexican marigold, italian
parsley and I can't forget pecans - he has one tree that drops nearly 1000 lbs. of pecans
yearly. This list is just out of Dad's little patch. There are other producers close by
that provide everything from goat cheese to eggs.
In fact, we are active in the Fredericksburg Farmer's Market, purchasing fresh produce from local growers and hosting live cooking demos. It takes place every Thursday evening 4-7PM May through September.

Iron Clad Trade outs
Some of the other folks include local iron artisan Steven Karp who has done all of our New
Orleans style gas lights, wine racks and the 'wine bottle' holding wine vine (quite
unique) in the center of the restaurant. the granite tables on both the covered and open
patios were created by local granite 'king' Phil Jackson. His ornate granite creations
grace living rooms, kitchens and patios, coast to coast. We were able to choose granite
from right here in the hills or as far away as Russia.
Artful Impressions
Our interior wall art consists of two paintings. If you've been in, you know why. The bold
use of color mixed with Spanish tile left little room for anything else. Artist
Shanni Lott did the paintings. You can see more of her art at her husbands' (Jeff Blank)
restaurant, Hudson's on the Bend outside of Austin.
These are just a few of the folks we have come to depend on to help 'grow' the Grill.
Their continued and enthusiastic support gives us a web of 'like minded' folks that like
good food and good wine. And we are continually appreciative of their support.
